1. Vegetable bulgar wheat khichdi low salt recipeIngredients:
- 1/2 cup Dalia
- 1 tsp oil
- 1/2 tsp cumin seeds
- A pinch of asafoetida or Hing
- 1/2 tsp finely chopped ginger
- 1 tsp finely chopped garlic
- 1/4 cup finely chopped onions
- 1/4 cup finely chopped tomatoes
- 1/4 cup finely chopped cauliflower
- 1/4 cup finely chopped bottle gourd
- 1/2 tsp chili powder
- 1/8 tsp turmeric powder
- 1/8 tsp salt
- Roast Dalia on a medium flame for about 2 to 3 minutes. Preferably use a nonstick pan and keep it aside.
- Heat the oil in a pressure cooker. Add cumin seeds and asafoetida or Hing and sauté on a medium flame.
- Now, add ginger, garlic, and onion. Sauté until it turns golden brown.
- Add tomatoes, bottle gourd, and cauliflower. Mix the mixture well on a medium while stirring the mixture.
- Add Dalia, chili and turmeric powder, salt, and one and a half cup of water. Cook it for 3to 4 whistles.
- Allow the steam to escape. Open the lid.
- Add half a cup of water and mash the batter lightly while keeping a medium flame.
- Serve hot.

- One small onion
- One tablespoon olive oil
- 1/4th tablespoon yellow mustard

Preheat oven at 425 degrees F.
- In a large bowl, toss cauliflower, carrots, onion with oil and salt. Place onto a baking sheet and roast it for 20 minutes. Remove the baking sheet and stir vegetables. Bake the vegetables for 15 minutes.
