Two Recipes That Can Change Your Taste During Diabetic Kidney Disease

Diabetes is a condition in which the body is not able to produce the required insulin or utilize the insulin that is being produced. This results in the raised blood sugar level, which is also called diabetes. Long term increase in the blood sugar level impacts the blood vessels of the kidneys and damages their ability to function as a filter. 1. Vegetable bulgar wheat khichdi low salt recipe

Ingredients:
  • 1/2 cup Dalia
  • 1 tsp oil
  • 1/2 tsp cumin seeds
  • A pinch of asafoetida or Hing
  • 1/2 tsp finely chopped ginger
  • 1 tsp finely chopped garlic
  • 1/4 cup finely chopped onions
  • 1/4 cup finely chopped tomatoes
  • 1/4 cup finely chopped cauliflower
  • 1/4 cup finely chopped bottle gourd
  • 1/2 tsp chili powder
  • 1/8 tsp turmeric powder
  • 1/8 tsp salt

Recipe:

  • Roast Dalia on a medium flame for about 2 to 3 minutes. Preferably use a nonstick pan and keep it aside.
  • Heat the oil in a pressure cooker. Add cumin seeds and asafoetida or Hing and sauté on a medium flame.
  • Now, add ginger, garlic, and onion. Sauté until it turns golden brown.
  • Add tomatoes, bottle gourd, and cauliflower. Mix the mixture well on a medium while stirring the mixture.
  • Add Dalia, chili and turmeric powder, salt, and one and a half cup of water. Cook it for 3to 4 whistles.
  • Allow the steam to escape. Open the lid.
  • Add half a cup of water and mash the batter lightly while keeping a medium flame.
  • Serve hot.

2. Roasted carrot and cauliflower salad

Another renal diabetic chart recipe includes salad made from kidney-friendly vegetables.
Ingredients:
  • One small cauliflower
  • Five medium-sized carrots
  • One small onion
  • One tablespoon olive oil
  • 1/4th tablespoon yellow mustard
  • 1/4th tablespoon mustard seeds
  • 1/4th tablespoon salt
  • 1/4th tablespoon black pepper

Recipe:

Preheat oven at 425 degrees F.
  • In a large bowl, toss cauliflower, carrots, onion with oil and salt. Place onto a baking sheet and roast it for 20 minutes. Remove the baking sheet and stir vegetables. Bake the vegetables for 15 minutes.
  • In another large bowl, put some oil, black pepper, and mustard seeds.
  • Combine the vegetables and toss them with the salad dressing.
